I used to spend a good part of the summer with my Grandparents. My Grandma was a wonderful cook and loved to serve us as many kinds of veggies as she could, in all kinds of wonderful ways! This was one of my favorite soups, and every time I got to choose what I wanted - this was it!
When I make it, you would think my kids had gotten happy meals - they LOVE it! I made a few changes and we all really love it!
Cream of Broccoli Soup
1 1/2 cups chicken broth (may use bullion cubes)
1/2 cup onion, chopped
2 cup fresh or frozen broccoli
2 TBSP butter
2 TBSP flour
1 cup milk - or more
dash pepper
In saucepan combine chicken broth, chopped onion, & broccoli - cook till tender.
In a separate bowl beat the rest of ingredients until thick. Mix two together and blend in small batches. Return all to pan, -heat to a simmer, allow to thicken 5 minutes or so.
***Kristi's note. I QUADRUPLE this! It makes enough for 2 meals for our family. I also add chopped turkey ham (1-1 1/2 cups) 1/4 cup grated Parmesan cheese, and 1 1/2 - 2 cups shredded cheddar cheese. Add the cheddar cheese after you remove from the stove - allow to melt without boiling! YUM! (Reduce all amounts if you don't quadruple!)

That sounds so yummy - especially for this snowy day. I will have to try this one out (after I get some broccoli)
