I have had a few requests this past week foor my Mom's Peach pie recipe. It is sooooo that time of year. This stuff is awesome and let me say - there is never any leftover! Make at least one more than you think you will need! ;)
Boil and cook till clear:
1/2 C peach puree
3/4 C sugar
1/2 C water
2 TBSP lemon juice
2 TBSP cornstarch
Cream in a separate bowl:
4 oz cream cheese (1/2 stick)
1/2 C powdered sugar
1/2 TBSP vanilla
1/3-1/2 (pint sized) carton whipped cream (we usually sweeten it with a little sugar first)
Place creamed mixture in graham cracker pie crust. Over cream mixture arrange 1 cup fresh sliced peaches. Pour puree mixture over top. Let cool! YUM!!!!
And now I have to go ask forgiveness for sharing this super secret recipe with you... I better get a pie for my trouble! ;) Just kidding! Hope you love it as much as we (and everyone we know) does!!

This sounds YUMMY! Silly question though: do you use the cream in the quart or pint container? Not sure how much to use...that would either be 2/3 to 1 cup (if it's the pint carton) or 1 3/4-2 cups (for a quart carton). THANKS!

Great question - I was going to wait till I got to the store to look at the containers to tell you for sure - is that sad??? I just know what I grab and have no idea what it really is! I am pretty sure it is the Pint though. That isn't the tiny one or the huge one - just that perfect middle size... right??? ;)
