I threw this together last night and the family ate it up so quick I was thrilled. My husband said I could make it once a week and he would love it! Perfect! A Paleo meal for the whole family!!!
Beef 'n cabbage
1 onion, chopped
1 small head cabbage, sliced
1 lb lean ground beef
*salt and pepper
olive oil
Hash browns or potatoes for anyone NOT Paleo!
In a large frying pan tat has a lid sautee onion in a small amount of olive oil. When beginning to get tender add cabbage and cover. In a seperate pan cook ground beef until well done. When beef is finished add to cabbage and onion mixture (include all the juices - there should be very little fat). Allow cabbage to fully cook to desired texture (we like our fairly mushy). Meanwhile in a small amount of olive oil cook hashbrowns or slice precooked potatoes. Serve cabbage mixture over hashbrowns or potatoes. For the Paleo person leave potatoes out. For the Non Paleo add ketchup if desired!
*As far as salt and pepper goes I use Celtic sea salt and fresh ground pepper, and I salt and pepper everytime I add something new to the pan (small amounts of course, but that way you know everything is seasoned well).

Oooh, sounds yummy! And, it sounds like a yummy low budget meal. I think I may have to try that this week!
