Southwest Peppers

I debated posting this since I have not actually tasted them yet.... but they smell divine and so I can't help myself! I combined a few recipes I have recently found for stuffed peppers to come up with this and I am so excited for dinner!

Southwest Peppers

6 Bell peppers (green, orange, red, or yellow - mix it up!)
2 (4 oz) cans green chilies
1 lb ground turkey
1 onion, finely chopped
1 bunch spinach, coarsely chopped
2-3 cloves garlic, minced
1 Cup cilantro, finely chopped
2 tsp cumin
1 tsp chili powder
1 tsp salt (I prefer Celtic sea salt)

In a medium bowl mix Turkey, green chilies, cilantro, onion, garlic, spinach, cumin, chili powder and salt.
Cut off the tops of peppers and set aside. Clean out peppers and place in a baking dish.
Stuff the peppers with turkey mixture; place tops on peppers to close.
Bake @ 350 1 hour

*NOTE - this was AMAZING! We all (including the kids) loved it!!! (Though we all preferred the red peppers to the green - of course!)
