I did a makeover on one of my favorite soups today!!! It was even faster and soooo yummy! I made it extra spicy to warm me up since it is so cold outside - so feel free to dial down the spiciness if it is too much for ya!
Curried Coconut Spinach and Shrimp Soup
Saute in a soup pot for 5 minutes
2 TBSP olive oil
1 large onion, diced
add 3-4 cloves garlic and cook 2 minutes more
Add, and cook for 1 minute or so -
2 tsp yellow curry
1/2 tsp tumeric
1 tsp garam masala
1 tsp chili powder
1 tsp cumin
1/2 tsp red pepper flakes
Add
8 Roma Tomatoes, diced (or 2 cans diced tomatoes)
2 tsp lemon juice
2 1/2 C vegetable broth
1 can coconut milk
Bring to a boil and add:
2 C small -medium sized shrimp (I used the frozen already cooked kind)'
1 bunch cilantro, chopped
1 bag spinach
Allow to return to a boil , boil a minute or two and serve! YUMMY!
