I was in serious need of some comfort food a few days ago... so I made my Grandma's soup!!! It is soooo delicious and I made it dairy/gluten free with a couple of easy changes! We all liked it even better, it was so creamy! I added in diced ham and the kids sprinkled cheese on top! GREAT meal!
So - the changes I made to it....
I switched out the milk and used coconut milk (I thought it might be too sweet - but it wasn't - it was just really creamy)
I switched out the flour for Potato flour (you could also use arrowroot flour!).
Hooray for food makeovers!
